Chef Works: Who was your greatest culinary influence?
Charles Rothman: My mother was my greatest culinary influence, not because of how she cooked but because she exposed me to all types of food both domestic and abroad. She helped foster my love of food and flavours which translated to cooking as I got older.
Chef Works: How would you describe your cooking style? Are you a technician? Or do you prefer to improvise?
Charles Rothman: I am definitely an improv. Having never been formally trained, my experience came from working in the industry. Tastes, textures and visuals help guide my cooking
Chef Works: Best anecdote from the kitchen?
Charles Rothman: I was an F&B Director for a large Casino many years ago. The power went out on a packed Friday night while my chef was on holiday. All table games and slots halted when the power went out. The casino boss wanted complimentary food and drink for the angry guests. With dim emergency lights, tea-lights and cell phone flashlights the kitchen team and I banged out copious amounts of food keeping the angry guests at bay. Every year since we did a candle lit team dinner to commemorate the amazing efforts of our culinary team!
Chef Works: If you weren’t a chef, what would you be doing?
Charles Rothman: If it were up to my Mom I’d probably be an accountant but I truly can’t see myself doing anything that wasn’t directly related to food or hospitality.
Chef Works: You can only have breakfast, lunch or dinner food for the rest of your life. Which do you choose and why?
Charles Rothman: Lunch for sure. It’s the most diverse meal of the day. It can be a breakfast or dinner or just a big-time sandwich.
Chef Works: Your all-time favourite culinary tip…
Charles Rothman: When all else fails, use dill.
Chef Works: How does your culinary uniform make you feel?
Charles Rothman: As a progressive company I feel our uniforms provide a modern look while still maintaining the presence of a professional chef.
